This peanut butter chocolate chia pudding recipe is prefect for overnight! Unsweetened almond milk, a touch of vanilla and maple and a healthy breakfast or snack--you choose!
Peanut Butter and Chocolate and Chia, oh my!
What? Another peanut butter and chocolate combo recipe?! Who would have thought! It's a combo that I have so often--it's my lifeline I guess and this chia pudding recipe is just another easy and delicious way to enjoy it!
I just love it. One of my nephews can't stand peanut butter and it makes me wonder if we are really related. It baffles me.
I also understand peanut allergies are a very real and serious thing so I like to be sensitive to those living with this issue as well. Hopefully, almond butter or another seed butter has become your favorite and you can always sub one of those for the peanut butter. Once you mix it with the chocolate, you can't go wrong.
Can you say ch-ch-ch-chia?!
I will tell you one thing, chia pudding can be very hard for people who have a thing about texture. And there really is a solve for that!
You can pop this chia pudding recipe into the blender and it also becomes a smooth, rich creamy pudding. I usually prefer it that way, but this one I actually loved as is. Again, it must be the peanut butter. Of course it is, who am I kidding.
I always have to laugh thinking back to the chia pet days. Who knew these would become such the superfood of the future down the road when we were just sprouting them out of animal shaped pots. But here we are getting ready to have it as a tasty treat!

What you will need to make this Peanut Butter Chocolate Chia Pudding Recipe:
- chia seeds: you can find chia seeds just about anywhere anymore. Your local grocery is very likely to have them. You can also get some in bulk for great prices on amazon. Black or white chia seeds, doesn't matter, both will work!
- milk: I usually just go with what we have on hand. Typically that means vanilla almond milk or whole milk. I gauge it based on what needs to be used up first.
- peanut butter: for best results, use a drippy, creamy natural peanut butter. This stirs so much easier into recipes than the no stir kind if you ask me!
- cocoa powder: unsweetened and you can opt for a special dark or regular cocoa.
- maple or liquid sweetener: I could drink maple from the jar, sorry if that grosses you out. It is my favorite liquid sweetener, but opt for what you enjoy the most!
- vanilla extract

Peanut Butter Chocolate Layered Chia Pudding
Ingredients
Chocolate Layer
- 1 c milk of choice
- ¼ c chia seeds
- 3 T cocoa powder
- ½ tsp vanilla extract
- Dash of sea salt
- 1 T maple syrup
Peanut Butter Layer
- 1 c milk of choice
- ¼ c chia seeds
- 3 T natural creamy peanut butter
- ½ tsp vanilla extract
- 1 T maple syrup
- Dash of sea salt
Instructions
- In separate mixing bowls, whisk together all ingredients for each of the layers.
- Chill in fridge for about 2 hours.
- Once pudding is set, layer into small serving dishes. Garnish with dark chocolate shavings if desired.
- Chill until ready to serve.
