Your favorite cereal and French Toast all in one? Yes, please! This Peanut Butter Chocolate Crusted French Toast adds a bit of crunch and fun to your average French Toast using new Peanut Butter & Cocoa Pebbles™!
There is nothing like the traditional cereal bowl with milk, but today we are gonna shake things up. Summer is still here, school is not back in session just yet, so let’s live it up and enjoy a really fun breakfast today.
What was your favorite cereal growing up?
I had too many favorites to even begin to list but Fruity Pebbles was in my top 3 for sure. The best part was the milk at the end and slurping up the last of it. Oh, and they were great in a marshmallow cereal bar as well. The best! So many cereals tug at my heart because they bring me back to my childhood–giggles around the table with my sisters, playing the games on the boxes and digging for the toy included in some of the boxes–although I don’t think they do that anymore. If you have been around here long enough, you also know my true love for all things peanut butter and chocolate. It is the combo that I can never EVER get enough of. So today I am obviously extremely excited to bring you a recipe that includes a brand new flavor from Post’s Pebbles Cereal family and it is a WINNER.
Peanut Butter & Cocoa PEBBLES™ Cereal was clearly meant to be. I mean, this is the greatest combo in history, is it not?! And while you will love the crispy rice cereal in a classic bowl with milk, that’s not the way we are rocking our day today–today, we are doing French Toast, and taking it up a notch. The best part about summer breakfast is that it doesn’t always have to be rushed. Bonus if you even sleep in a bit! Since you can take your time and savor each bite instead of eating on the go, things like French Toast can most certainly happen. And this one is extra fun for the kiddos to help out with–who wouldn’t want to roll their French Toast in their new favorite cereal? You are definitely going to have helpers with this one.
So you are probably wondering first, where can I get some of that cereal?! Don’t worry, it is now in stores at your local Walmart. So let’s talk about this recipe. Not long ago, I brought you this Coconut Almond Crusted French Toast and to be honest, it changed French Toast for me entirely. Not to mention this Spiced Pear French Toast Casserole. I really love a little crunch with mine since French Toast texture is certainly on the softer side.
Sometimes I top mine with pecans or shredded almonds, but when you add your crunch before throwing it on the griddle, then it toasts that up as well. I advise using a thicker cut bread such as Texas Toast. Or fresh bread from the bakery that you can cut will work great.
That way you have more surface area for the crust. The trick here is making sure to get plenty of the egg mixture coated on the crust so that it will pick up lots of the cereal when you roll it in. If you are lucky, some of the cereal will trickle over to the edges of the bread and that is just amazing as well.
Cook it up just like you would any other French Toast, top it with some extra cereal, maybe some chocolate chips and a drizzle of peanut butter for even more of this epic combo and you are all set for summer breakfast on the patio!
- 3 large eggs
- 1/2 c milk (dairy free will work as well)
- 1 T pure maple syrup
- 1 tsp vanilla extract
- 6 slices thick cut bread
- 1 c Peanut Butter + Cocoa Pebbles Cereal
- chocolate chips and peanut butter to garnish ( if desired)
- Whisk together eggs and milk well. Add vanilla and maple. Whisk well.
- Pour cereal into a medium bowl and set aside.
- Heat griddle to medium. Dip each slice of bread into egg mixture and allow entire slice to coat, making sure to get the edges of the bread really well.
- Roll the 4 edges of the bread in the cereal to cover. Place on lightly greased griddle and cook each side for about 3-4 minutes each side or until browned to your desired darkness.
- Repeat with the rest of the bread and serve with extra cereal on top!
