I am really working on making the most of all the food in our house. We are trying to use all the produce we can before it goes bad, freezing leftovers, and getting creative with unused or extra ingredients when possible. This recipe is the latter indeed. I had a big can of black beans and wanted to give some to Sam for part of his dinner. He had had them previously and loved them. He ate a few, but then became more interested in everything else on his tray that night. The boy is a good eater so I don’t really have to worry about him not getting enough into his little (but big, ha) belly.
I stored the beans in the fridge and sort of forgot about them until a couple days later when I knew I would need to use them or lose them at that point. I wasn’t too sure what to use them for but we had just had Chipotle the night before so nothing in that category. And I was feeling something snack like and simple. So what’s a girl to do??

That’s right friends, if you have black beans and only a few minutes to make something to snack on with them, then this rich and creamy dip is what you need!
Before I go any further, there is something really important I need to say about this recipe. This is NOT a recipe that is meant to be a “better” option than brownies or brownie batter (eggless of course). It’s not meant to be something you make so that you won’t cave and eat brownies. Nope. If you want the real deal, nothing is gonna cut it other than a big gooey brownie, so just keep that in mind.
There was a point in time that I would have craved a brownie and then created this recipe so that I had something I could eat instead, and still feel “good” about myself. Those days are gone though. This recipe is just another fun option you can add to our arsenal of creative recipes–creative recipes that are chocolate, that is. It’s a way to use up black beans that are in the pantry and about to expire. It’s a way to have a brownie batter like treat you can eat because it does not contain eggs. It all comes down to the “why” really. But if your “why” is that you think it sounds like a delicious treat, then by all means, I am not holding you back!
Toss everything in your food processor and you are ready for dipping in no time!
- 1 15 oz can black beans, drained and rinsed
- 1/4 c peanut butter
- 3 T cacao or cocoa powder
- 2-4 T maple syrup (to desired sweetness)
- 1-2 T milk of choice
- 1/4 c chocolate chips
- 1 tsp vanilla extract
- dash of sea salt
- Combine black beans, maple, and vanilla in a food processor. Process until beans are smooth.
- Add in cacao, chocolate chips, milk, peanut butter and sea salt. Process until smooth (the chocolate chips will still be a bit choppy.)
- Eat right away or chill for 20-30 minutes before eating to allow flavors to meld more. Store in an airtight container in refrigerator.
