Hearty oats, juicy apples and plenty of cinnamon make these Apple Oatmeal Pancakes the perfect easy breakfast! Fluffy and full of flavor, all you have to do is pop everything in the blender! This pancake recipe is great for all of your brunching fun.

A big bowl of oatmeal is great in the morning, but taking your oatmeal and turning it into fluffy pancakes is next level!

These apple oatmeal pancakes are the most kid approved pancakes in our house–hoping they will be for you as well!

Why you will love these:

  • Easily made in the blender: from processing the oats into flour, to whipping up the apple pancake batter, you don’t have to make much of a mess other than dirtying up the blender to make these.
  • Super kid friendly. We started our little guy on these from the time he was about one and they continue to be his favorite. He stopped eating oatmeal in its traditional form around that time so I worked on a way to incorporate oats into pancakes instead!
  • Easily made gluten free. If you can’t have gluten, don’t worry–just make sure you have certified gluten free oats or oat flour and you are set for these apple oatmeal pancakes.
  • They are freezer friendly. I make a couple batches at a time and then freeze them for up to two months at a time.

Ingredients:

  1. Rolled oats or oat flour: Making your own oat flour is soooo simple and much more cost effective.
  2. Egg
  3. Milk: I switch back and forth between whole and almond milk. It always just depends on what I have or what needs to be used up.
  4. Apple: gala or fuji for me, every time. But use your favorite for sure!
  5. Cinnamon: My favorite spice. I add it all and more!
  6. Vanilla
  7. Apple Cider Vinegar: This adds some extra fluff to your pancakes by reacting with the milk and other ingredients.
  8. Baking Powder: Make sure it’s fresh. This is an overlooked ingredient and it often sits for long periods of time in the pantry. If it’s not fresh, it will impact anything you use it in–and you want fluffy apple oat pancakes, right?
  9. Oil: I typically go with melted coconut oil or canola oil.
  10. Maple Syrup: I prefer maple to sweeten these but also add in some brown sugar sometimes too.

Can I make these Apple Oatmeal Pancakes vegan?

You sure can! Use a flax egg in place of the regular egg by whisking together one tablespoon of flax meal with three tablespoons of water. Chill in the refrigerator for about 10-15 minutes so it becomes gel-like. Use plant based milk and then you will have yourself a vegan stack of apple oat pancakes.

Recipe Notes and Tips:

  • If you have oat flour ready to go, you will need about 1 1/2 cups oat flour versus the 2 cups of oats. 2 cups of rolled oats will yield approximately that much oat flour.
  • You can grate or small dice extra apples and add them into the apple oatmeal pancake batter for even more apple flavor. Chopped pecans or nuts are great in these as well.

Apple Cinnamon Oatmeal Pancakes

Instructions 

  • In a food processor or high powered blender, process the oats until a flour consistency.
  • Transfer flour to a mixing bowl.
  • In a blender, add all other ingredients and blend until smooth and combined.
  • Add the flour to the mixture and pulse or mix to combine. (You don't have to use the blender for this, you could also pour the mixture into the bowl with the flour and stir to combine!) If the batter seems too thick, add more milk one tablespoon at a time until desired consistency.
  • Pour desired amount for each pancake over a griddle or pan at about medium to medium high heat.
  • Heat until bubbles form all around the edges of the pancakes and then flip.
  • Cook to desired golden brown.
  • Add your favorite toppings and enjoy!

      Hi! Yes, it should be. And its a rough estimate based on an app. Also everyone makes their pancakes different sizes so that also can shift it.
