These simple no bake Chocolate Coconut Date Balls are a great snack that will keep you fueled and let you enjoy all of the chocolate! Only about 5 minutes to make and an extra chocolate drizzle to make them all the more delicious!

No bake energy bites are my favorite snack. The flavors are endless and they are so perfectly sweetened with dates. These rich chocolate coconut date balls were inspired by my favorite Peanut Butter Chocolate Chip Lara Bar Bites. Clearly we needed a chocolate version!

Why these date balls are the best:

  • You only need a handful of ingredients.
  • They are easily made vegan and gluten free for those with dietary needs.
  • You can make these chocolate date balls in literally 5 minutes.
  • They are freezer friendly.
  • But most of all, the chocolate and more chocolate with that drizzle!

Ingredients and Substitutions:

  • pecans: I use raw nuts in these chocolate coconut date balls. If you have an allergy, you can use all almonds or all pecans. You can sub walnuts or cashews too.
  • almonds: See notes about the pecans above.
  • medjool dates: make sure to remove the pits. Medjool dates are larger than other dates, so if you use smaller dates, you may need more of them.
  • coconut: I use shredded and unsweetened. If you use the sweetened, you will probably not need as many dates as the sweetened coconut has a lot more moisture.
  • vanilla extract
  • cocoa powder: I use unsweetened. You can use a dark cocoa powder if you want more of a rich, dark flavor.
  • sea salt: just a touch is all you need!

How to make these energy balls:

They are so simple, promise!

  1. Combine the nuts in a food processor. Process until a fine, grain like texture.
  2. Add the other ingredients and process until a dough starts to form. It will begin to ball up in the food processor. You can add a couple teaspoons of water if the mixture does not seem to form into a ball or is dry.
  3. Roll the mixture into bite sized balls and chill for about 15-20 minutes.
  4. If desired, you can melt chocolate chips and drizzle over these energy bites for more chocolate goondess!

Recipe Tips and notes:

  • Store these date balls in the fridge for about 2 weeks. You can also freeze them for about 2 months.
  • If your dates seem dry, you can soak them in warm water for about 10 minutes before making this recipe. This will help add the needed moisture into the chocolate balls so they hold together well.
  • As long as you use 2 cups of any combination of raw cashews, almonds, pecans or walnuts, you should have success with these bites!

No Bake Chocolate Coconut Date Balls

  • 1/4 cup dark chocolate chips

Instructions 

  • In a food processor, process almonds and pecans until a fine, grain like texture.
  • Add all other ingredients and process until a dough begins to form. (If it seems to be a bit dry, add a tsp of water or so and process until the dough forms.)
  • Roll dough into bite sized balls and chill for about 15-20 minutes before serving.
  • Optional: If using chocolate drizzle, melt chocolate chips and stir well. Transfer to a plastic baggie and cut a small slit in the corner. Drizzle over each ball. Allow to chill for about 10-15 more minutes.
